Guardians of flavor, Explorers of Taste

For fifty years, we have exclusively produced pure sheep’s milk cheeses, honoring Sardinian dairy traditions: for us, quality is not just a certification but part of the world where our roots run deep.

At Sardaformaggi, quality is a daily commitment to being and remaining an artisanal industry, capable of offering traditional products while leveraging the most modern technologies and highly professional and specialized labor.

Quality means ensuring the highest traceability of products and supply chain, meticulously adhering to all PDO standards, and continuously monitoring raw materials, products, and environments with ongoing analyses.

This synergy between quality, tradition, and innovation allows us to offer a rich range of products with a unique and special flavor.

Certifications

The BRC and IFS standards are international schemes promoted with the aim of harmonizing, based on common principles, the different standards adopted by European large-scale distribution. Large-scale distribution has indeed become an international promoter of hygiene and quality standards, requiring their application by its suppliers. Through these schemes, it is possible to monitor and verify processing methods and compliance with hygiene requirements along the entire supply chain, ensuring food safety and prompt risk management in case a problem arises.”

“These models are recognized both in Europe and the rest of the world, and Sardaformaggi has proudly held this important certification since October 2007.”

The association came into being between 2001 and 2002, when a group of professionals decided to focus on safeguarding and promoting mountain cheeses and their environment. In line with its philosophy and to accommodate the many languages of the participating countries, the association chose the Latin name “Caseus Montanus,” meaning Mountain Cheese.

Sardaformaggi, with its facility situated over 700 meters above sea level, is proudly part of the mountain dairies and the association.

Consortiums

Consortiums

The Consortium for the Protection of Pecorino Romano Cheese, established in November 1979 by a group of operators from Lazio and Sardinia, was granted the responsibility for overseeing the production and trade of Pecorino Romano by the Ministry of Agriculture in cooperation with the Ministry of Industry on January 14, 1981. Since April 28, 2002, the Consortium has also been tasked with the protection of the PDO designation by the Ministry of Agricultural and Forestry Policies.

The aims of the Consortium, as specified in its statute, include the protection and oversight of the production and marketing of Pecorino Romano, the protection of the designation in Italy and abroad, the promotion of consumption, and the improvement of product quality, in collaboration with regional, national, and community bodies and institutions.

Made exclusively from whole sheep’s milk sourced from its area of origin, Pecorino Sardo is an excellent table cheese offered in two varieties based on size and organoleptic properties: DOLCE and MATURO. Since July 2, 1996, the quality of Pecorino Sardo PDO in both varieties has been guaranteed by the Protection Consortium, now composed of cooperative and private companies operating across the entire region.

On December 11, 2002, by Ministerial Decree, the Consortium was officially recognized as the sole Body of Representation and Protection for PDO Pecorino Sardo and was officially tasked with monitoring against any abuse, fraud, and counterfeiting in commerce. The ministerial mandate has been regularly renewed every three years.

The IFL Consortium is a consortium of companies producing food and wine specialties from various regions of Italy, with the aim of promoting and representing some of the best players in ‘Italian Food & Lifestyle,’ advancing the products of the associated companies into the main and most receptive markets.”

“IFL includes among its member companies 10 of the most important small and medium-sized enterprises producing high-quality food and wine specialties. The consortium’s aggregated turnover exceeds 160 million euros, with 41% generated in international markets.

The Consortium’s mission is aptly captured by the phrase ‘Food For Passion,’ reflecting the love, care, and dedication that each producer invests in their products.

Innovation and quality

We invest in research and development to continuously create new products that meet the changing needs of consumers, while simultaneously striving to improve the quality of the historic brands that have made us known worldwide.

We have a vast and diverse assortment: from table cheese to aged pecorino, from grated cheeses to ricotta and stretched curd cheeses. What never changes is our focus on the quality of raw materials and the excellence of the production process.

Innovation is our daily bread. We can confidently say that without innovation, there would be no Sardaformaggi, as since 1963 we have revolutionized the production logic of pecorino cheese in Sardinia, creating a product previously unknown, which has become the cornerstone of our flagship products: sweet table cheeses.

Today, our mission is to satisfy consumers with ever-changing needs, constantly offering new products that highlight the unique character of sheep’s milk cheeses, the tradition of Sardinian cheese-making, and the delicate flavors that come from the care we put into our products.

Since 1963, we have brought five-star cheese excellence to the table. Quality at Sardaformaggi is not just a certification but a combination of forces within our flavors.

Concern for the environment

“We do not inherit the world from our ancestors, but borrow it from our children” (Native American proverb).

This is our belief, which we strive to uphold by operating with the utmost respect for the wonderful land that hosts us.

First and foremost, we maximize the rational use of water to minimize consumption, implementing complex washing cycles to limit resource waste.

Furthermore, we directly purify water with a significant internal plant: we have full confidence that the water is genuinely purified according to the law.

Regarding the reduced environmental impact of transportation, we collect milk only from areas adjacent to the Buddusò production plant, despite covering a vast area, to maximize efficiency in transporting raw materials.

Moreover, we are strongly committed to researching production methods for all renewable energy sources.

In 2012, the first 3500 square meter photovoltaic system with a capacity of 420 KW/h was installed. Initially absorbing about 10% of the company’s energy needs, it was just the first step in an ambitious project to produce at least 40% of the energy needed on-site, using all possible renewable sources currently known. As of today, the installed capacity already amounts to 950 KW/h.

The use and consumption of detergents used in daily cleaning of the facilities are aimed at maximum recycling to limit their dispersion in the environment and preserve its health, ensuring that our products are highly genuine.

We love natural products, which is why we take care of the land where they originate.
