Sardaformaggi: a promise of excellence for the most refined palates

The salting process is an essential chapter in the creation of our products. This technique preserves the cheese’s outer surface from mold development, enhances its flavor, and contributes to the formation of its rind. This process can occur through immersion (submerging the wheels in brine) or “dry” salting, as is done for Pecorino Romano PDO. In dry salting, coarse salt is repeatedly spread over the outer surface of the wheels, making Sardaformaggi’s Pecorino a unique and artisanal product.

Seasoning is a crucial phase that allows the products to refine their flavor and aroma, releasing a unique taste. After being manually checked one by one, the wheels are placed in large, well-ventilated rooms where they age under careful supervision. The aging process lasts as long as necessary to bring the cheese to its peak in terms of flavor and integrity. This phase can last from a few days to over two years. Sardaformaggi’s aging rooms are equipped with a sophisticated ventilation system that maintains optimal temperature and humidity conditions. Thanks to our expert selectors, we choose only the best wheels to ensure consistent excellence.

At the Figline Incisa Valdarno plant, we portion our pecorino cheeses into wedges of various weights and package them in vacuum-sealed bags or thermoformed trays to meet every customer need. Our four packaging lines allow us to offer packages that ensure maximum organoleptic preservation and cheese safety, with an ever-increasing focus on environmental sustainability.
In the Rasping department of the Figline Incisa Valdarno facility, our pecorino is grated and packaged in various sizes of ATM bags, ensuring the freshness and fragrance of “freshly grated” cheese. Modern packaging lines equipped with cutting-edge technology are dedicated to the grated cheese, reflecting the company’s innovative spirit and commitment to responding to the ever-evolving market trends

Our cheeses cross the Tyrrhenian Sea with biweekly shipments: they depart from Sardinia, reach Incisa Valdarno, and are then shipped worldwide.
The Tuscan headquarters of Sardaformaggi is truly one of the company’s beating hearts, not just a mere distribution center but a fully-fledged facility where the cheese arrives still “naked” and continues its maturation until packaging. The Incisa site also houses our Sales Offices, ensuring logistical proximity between the commercial management, company ownership, and customers, allowing us to boast a remarkable problem-solving ability in a short time and adherence to scheduled timelines.
Finally, orders and shipments are managed in Incisa Valdarno, bringing our products directly to tables in Italy and around the world.
