Spinach with pecorino and pine nuts

PREPARATION

Heat a generous amount of oil with a crushed garlic clove in a pan. When the oil is hot, add the fresh spinach that has been previously washed and dried. Cover the pan and cook the spinach over high heat.

Cut the pecorino cheese into flakes.

After a couple of minutes of cooking, add the pine nuts to the spinach, cover again, and cook for another two minutes.

Turn off the heat and transfer the spinach to a serving platter, removing the garlic clove. Season with salt and drizzle with extra virgin olive oil.

Finish the dish by sprinkling pecorino cheese flakes on top.
